Classical (traditional). Maceration takes place in contact with skins, with natural yeasts, for 14 days, in a stainless steel container. Maturation: eight months, 70% in a stainless steel container and 30% in oak barrels. Although Cabernet Sauvignon is suitable for immediate drinking, it can be left aged for at least six years when properly fed. The richness of fresh fruity aromas and the freshness of the body will acquire a more mature and elegant note during ripening.
Ageing potential: 2020 - 2026.
Healthy, ripe grapes give red wine, which exhibits extraordinary organoleptic properties. The classic ruby color, with a light purple hue, reveals the seductive bouquet of plums, fresh black currants and other dark forest fruits. Herbs are also slightly perceptible. On the palate we find a wealth of various forest fruits; in the foreground are more recognizable raspberries and dark cherries. Tannins are barely perceptible. It is a fresh but very pleasant, soft and drinkable wine, with an extremely nice aftertaste.
We recommend the wine to all types of red meat, prepared in different ways. It can also be combined with easily prepared poultry, veal, pork, smoked meats, salamis, medium-aged cheeses and medium spicy vegetarian food, and risottos. To serve at 18° C.
