Harvest: Hand Picking.
Vinification: Maceration takes place for 4 days in a stainless steel container. Gentle compression with a pneumatic press. Fermentation takes place with natural yeast grapes. Maturation: 15 months in a wooden conical oak container, 5 months in oak barrels. Maturation in the bottle: at least 2 months.
Ageing potential: 2020 - 2030.
Intense golden yellow color predominates. It's hard to describe richness of the aromas that this wine carries in itself foretells the long persistence of the aromas, which escalate from Mediterranean herbs and perceptible notes of paprika, through light tobacco, all the way to leather. The first impression in the mouth is a pleasant elegance, conditioned by a rich, full and at the same time harmoniously fresh persistent taste that is growing.
The wine can be served with seafood (oysters, shrimps, crabs, lobster, mussels, ...), prepared with an aromatic tomato sauce; to risottos with spring herbs, pasta with asparagus or vegetable-based pasta (especially peppers, tomatoes and basil); to tuna pate in marinated peppers or chopped tuna with spices on fresh rocket; to smoked eel; aged goat or soft cow cheese. To serve at 12° C.
