Maceration 14 - 16 days in contact with skins and seeds in a stainless steel container. Gentle compression with a pneumatic press. Spontaneous fermentation. Natural maturing in oak barrique for 3,5 years and 6 months in bottles.
The wine is intense dark ruby color. A dense fruity bouquet with the expected presence of black currant with spicy notes of wild cherry and coniferous forest. The taste is distinctly dry, delicate with a slight astringency. Ripe tannins and soft, lively acids make the wine pleasant and drinkable. The finish is long and slightly mineral.
Medium rare steak, roast or grilled lamb. Also great in combination with semi aged and semi-hard cheeses. Serving temperature: 16 - 18 °C.
